Corn Dog Muffins

My kids have not been on the same page when it comes to supper. One kid will eat meatloaf and meatballs. One kid will eat ravioli and potstickers. It’s getting annoying. So desperate times call for desperate measures and I finally made a recipe that I have been holding onto for over a year that incorporates hot dogs into a muffin. Hello Corn Dog Muffins.

 

 

These muffins are dense like a cornbread but not as sweet. If I didn’t have my little helper I probably would have added something savoury like cheese and chives but I kept these Corn Dog Muffins very simple.  My kids loved these. They ate them with ketchup and asked to have them in their lunches. You have no idea what a win this is for me and my husband. Our kids rarely eat their lunches and it bugs me more than when Brad Pitt left Jennifer Aniston for Angelina Jolie.

Corn Dog Muffins

1 cup cornmeal

1/2 cup all purpose flour

2 tsp baking powder

dash of salt

1 egg

1 1/2 cup milk

1/2 cup canned corn

1/4 cup melted butter

6 hot dogs

 

Beat egg, milk and butter. Add corn.

In separate bowl mix dry ingredients. Add dry ingredients to egg mixture.

Pour corn dog muffin mix into heavily sprayed or oiled muffin tins (do this or your muffins will stick)

Cut each hot dog into 4 pieces, press 2 pieces into each muffin.

Bake at 425F for 12 minutes.

Test to see if your knife comes out clean before removing from oven and let sit for 10 minutes before removing from muffin tins. You will need to circle your knife around the outside as they stick.
