Let’s move on.

When I was a little girl around 10 years old, we were on our family trip to my Aunt and Uncle’s in Red Deer, Alberta.  My American readers can insert their favourite joke here……

Which reminds me, remember on Ellen, the guy that worked at the bookshop was from Red Deer. I know it was supposed to be a punchline, but for us Canadians it was like we “made it”!

Any who….

Back to Red Deer.

My Auntie made the most amazing supper. I fondly remember it as “Green Chicken”. Auntie Char, has no idea what I am talking about.  She has no recollection of this dish. But for me it was so bloody delicious that even twenty years later I can still remember it.

This is a prime example of how I cannot let things go.

I believe that I have found  a version of it…..

Sweet Curry Chicken
3 Tbsp liquid honey
1 Tbsp Dijon Mustard
1 tsp margarine or butter
1 tsp curry powder
1 clove garlic, minced
8 skinless boneless chicken thighs.

In a small bowl, stir all ingredients. Pour over chicken.  Cover with foil. Bake for 20 minutes at 375 F.  Remove foil. Bake for another 20 minutes.  Place remaining sauce into a small pot and boil for a few minutes until it chickens. Pour over chicken and serve.

So there you have it.  I hope you like it. Actually, I don’t really care. I am just so glad that I finally found what has been haunting my dreams for the last 20 years.

It’s like Freddy Krueger all over again!
