Not So Casual Carrots

By far carrots are my favourite vegetable, mostly because you can use them to make cake. I have always wanted to try this recipe and finally got around to making the very savoury ‘Not So Casual Carrots’. This my first time making this and it was a huuuuuuuge hit at our house.  It was such a nice change to regular carrots. 

Not So Casual Carrots

12 carrots, peeled and sliced

1/4 cup butter

1/2 cup chopped onion

1/4 cup flour

1 tsp salt

1/2 tsp pepper

1/4 celery, garlic or other salt

1 tsp dried mustard

2 cups milk

1 cup shredded marble cheese

2 tbsp butter

Stove Top Stuffing

Cook carrots in salted water until tender, about 15 minutes. Drain.

In a fry pan melt butter and saute onions until clear and soft. Mix in flour, salts and pepper.

Next, add mustard and milk, bring to boil until it thickens.

Spray casserole dish with a cooking spray.

Layer 1/2 the carrots.

Put 1/2 of the shredded cheese on top.

Add the rest of the carrots.

Pour cream sauce on top.

Sprinkle with cheese.

In a saucepan, melt the 2 tbsp of butter and then add the box of Stove Top Stuffing.

Mix, then spread over the carrots.

Bake uncovered for 25 minutes at 350 F
