Apple Bread Pudding…

This is a bread pudding recipe that was given to me by my Mom after a trip to the East Coast with my Uncle Gordon. There is a chance I have remembered the backstory incorrectly. I have adapted the recipe a tad to add apples. And voila Apple Bread Pudding!

APPLE BREAD PUDDING

4-6 slices of day old bread or buns

2 tbsp melted butter

1/3 cup raisins (optional)

2 eggs

1 1/3 cup milk

1/2 cup white sugar

2 apples

1 tsp cinnamon

1 tsp vanilla

Spray 8×8 cake pan with non stick spray or grease with butter.

Break day old bread or buns into small pieces into cake pan.

Drizzle with butter. Add raisins (optional) and cored and peeled apple pieces.

Beat eggs and combine with milk, sugar, cinnamon and vanilla

Pour over bread and lightly push bread, apple, raisins (optional) down into the egg mixture.

Bake 350 for 45 minutes.

Serve with ice cream.

This can sit overnight and be thrown into the over first thing in the morning, too. Don’t be scared to have fun with this recipe. Try cranberries or blueberries instead of apples. I tend to use leftover french bread but have also used cinnamon buns and hot dog buns.
