I’ve made a version of easy Blueberry Bottom Cake before, but last time, I made it with chocolate cake and cherry pie filling and named it Easy Black Forest Cake, but for fun, I like to call it Chemical Cake.
Blueberry Bottom Cake
1 pkg of Mini Marshmallows
1 White Cake Mix (plus whatever is needed on box to make cake mix, usually eggs, oil and water) I like to look for gluten free cake mixes to keep this fully gluten free.
1 tin Blueberry Pie Filling
Spread mini marshmallows in a greased 9x 13 pan.
In another bowl make cake mix exactly as directions say on box.
Spread cake mix over the marshmallows.
Spread tin of Blueberry Pie Filling over the cake mixture.
Bake at 350 for 45 minutes.
This is truly a great recipe. If you eat warm, it has a pudding-like consistency. If you wait, it is still a very moist cake. I love it with whip cream or ice cream.
