Low Carb Pizza Crust…

Finding a low carb pizza crust has proved very difficult for me. But, I finally found one that is super easy to make and adapted it a tad! Halle- FRICKN-lujah! And it’s a little bit weird.

Low Carb Flax Pizza Crust

2 cups of Flax meal (basically its ground of Flax seed, I got mine at a Bulk Food store)

1 cup grated Parmesan cheese (pre grated in the canister kind)

4 eggs

Mix it all together in a bowl and let sit 5- 10 minutes.

Press onto a greased cookie sheet (please don’t judge my cookie sheet, I did NOT expect this to turn out so just used my icky old fish sticks pan) Try to get it as thin as you can, enough that you feel that it will not fall apart when you put your toppings on it. Pat it down enough that you will get two- 10 inch crusts from it.

Please note: This is a mistake I made, I should have patted it down quite a bit more, as you can see from the bottom photo,  it was a bit too thick.

The dough is also a bit sticky, so I suggest you wet your hands before you start patting it down.

Put in oven for 9 minutes at 350.

Remove from oven and add toppings. For this baby we used pizza sauces, pepperoni and mozzarella. Nothing too fancy.

Return your pizza to the oven for another 15 minutes or so.

It is VERY filling. But, it doesn’t taste like pizza dough. Like, at all. It definitely has a nutty taste to it.

My husband and I never even finished our pizza. Which is a feat all in its own. Usually, I eat what is on my plate, then my kid’s and then my husband’s. But, the kids dug it. Which was also shocking.
